As basketball fans revel in the brackets and seeds of March Madness, we welcome cuisine fans to celebrate Morso’s version of “madness”… Fresh Fava Madness. Chef Pino channels the energy of the season into an inspiring cooking demonstration on Tuesday, March 24, all focused on the perennial springtime favorite, the fava bean. Maltagliati pasta with fresh fava, prosciutto and cherry tomatoes

Sogliola al vino bianco con zucchine e fave

Lemon sole, pan roasted in a white wine sauce, served with zucchine and fresh fava
